Guest Post: Stephanie from Henry Happened

Hi, so excited to be guest posting today! I’m Stephanie Gerber, a mother of 2 and a fellow Kentuckian like Allison, who writes the blog henry happened. I call the site my “playground” for staying curious and always learning new things – like making pasta! Who knew it could be so easy? Hope you enjoy the tutorial. And stop by sometime to see what else we're learnin' & lovin'!


I am in love with homemade pasta. My kick of doing things myself (root beer, yogurt, cheese, pizza) continues, and I thought homemade pasta was sure to be delish. I was not disappointed! Plus it was amazingly easy.

Nikki agreed to show me her technique. For 3 adults, 2 toddlers and 2 babies we used 4 eggs (set out an hour before) and roughly 3 1/2 cups of unbleached all purpose flour.


Make a volcano with the flour and crack the eggs into the center. Whip with a fork and start incorporating the flour a little at a time.




Continue incorporating the flour until it's easier to do with your hands than with a fork. It will look something like loose dough. Then you knead for 10 minutes. (I don't think we kneaded this long, maybe 5 tops, and it was fine.) Punch a hole with your left thumb and use the heel of your right to bring the dough around. The will ensure the dough turns itself inside out.




Wrap with Saran Wrap and let the dough rest on the counter for about an hour. After it rests, slice off a section and start rolling. With a wine bottle if you have too... Nikki forgot her pasta roller and I don't have a rolling pin. Oops. You want it very, very thin. Keep flour nearby to help with the rolling.

Put a big pot of salty water on to boil at this point too. Slice the pasta into thin strips and put 'em all together in a bowl. It's okay if they clump together.




Separate the pasta as you drop into the boiling water. You only need to cook 3-4 minutes - don't over cook! - and it's ready to eat immediately. Drain, put back into the pot, and add the creamy sauce (recipe below.) If you're like me, you'll want to stand and devour the entire pot. YUM.


Homemade Pasta with Creamy Sauce
Ingredients for Creamy Sauce
(Nikki is a pro in the kitchen, which means she doesn't really measure things. I've done my best to capture what actually went into the dish.)

  • Couple of TBs of olive oil

  • 1/2 stick of butter

  • 1 container mushrooms

  • 1/2 of a red onion, chopped

  • 1 cup cream

  • 1 cup shredded parmesan

  • 1 cup frozen peas

  • Fresh tarragon, de-stem and roughly chop

  • Salt & Pepper

Preparation
Heat olive oil in saute pan, add butter and melt. Add the mushrooms and let them cook for 3-4 minutes. Add the onion and continue to saute for 5-7 minutes more. Add the cream and parmesan. Let it cook for another few minutes and add frozen peas. You could also add some proscuitto here. Give that a minute or two to warm up. Add the tarragon and finish with salt and pepper.

Hello, A Glimpse Inside Readers!


I'm Allie from Miss Lovie! I'm so excited to be posting today.

Snap-On Flower Onesie Dress


My friend asked me to make a onesie dress for her and she wanted me to make another one like the one I made at Easter:

The problem was the dress had to be for a newborn so I didn't have as much fabric to work with. I decided that one big flower would work best.


I am in love with this fabric!


For those of you who missed my Easter Flower Onesie Dress Tutorial, you should go check it out! I used a Summer Onesie Dress Tutorial from Running With Scissors to make the dress.


Since the flower was rather large, and ruffles tend to get a little crazy in the wash, I simply sewed on some snaps to the flower and onesie dress so when she's ready to wash it, the flower just snaps right off!


I originally saw this idea here awhile ago and have been dying to try it! Since my flower was larger than her's, I added a few snaps just in case. You could (like she did) make several flowers to switch out!

Guest Post: Mandi from Mandi Being Crafty

Hiya! I am Mandi, I have a small little blog called Mandi Being Crafty! I am a self proclaimed geek who loves to craft!


I am BEYOND excited to be posting for Allison today! This is actually my first EVER guest post so if it is a little rough around the edges I do apologize!!!

Recently my hubby, Sgt Army Pants, had surgery because of a spider bite he got while in Iraq. If you want all the gross details you can read it here. But if not that is fine by me too! Besides the fact that he had surgery and wasn't feeling a perfect ten, I was a mess. My husband does most of the cooking in this house. So needless to say I needed to pick up some slack and make dinner.
One of my friends on Facebook posted a recipe for a pork roast that sounded yummy. We have tried it before but since the instructions were so simple I figured I wouldn't be able to mess it up. (I have messed up making Hamburger Helper before) So I am going to share with you! If I can make this I am sure anyone can!!!

Jalapeno Apricot Pork Roast (slow cooker)

Here are the ingredients you will need!


2lb Pork Roast
1 Jar of Apricot Preserves
3TBSP of Dijon Mustard
1 medium onion
1 Jalapeno diced (or you can be lazy like me and buy a can)
Crock pot

First sear your roast on all sides.

Then cut up your onion into fours and pull apart.

Mix together the apricot preserves, dijon mustard, and jalapenos.

Place the roast inside the crock pot and arrange the onion all around.

Pour the mixture of apricot preserves over roast.

Set your crock pot on low and cook for about 5-6 hours. (That way the roast pretty much just falls apart).

Serve with rolls or by itself.


If you are worried about it being spicy it isn't! My kids are picky eaters and they actually love this! I hope you guys enjoy! Please visit me at my blog!

Giveaway Reminder!

Hi All!

Just wanted to say hello and remind all of you about the fabulous giveaway from Kristen from My Junk Drawer.
