Green Pepper Nachos

Hey friends, I hope you are all having  a very lovely spring. I am loving that we can have the windows open a LOT right now. It's slowly becoming my favorite time of the year...but don't tell fall!! Ha! 

Pretty soon I will be planting my garden. I do not have a green thumb but I do my best. Last year I didn't get much of anything from my garden but the year before was very prosperous. My dad is an excellent gardener and I reaped the benefits of that for many years!! (see what I did there?!)

I always plant some green peppers and mini sweet peppers. As I said, sometimes I get a lot and sometimes I don't get any, but I am hoping this year with a little more tender love and care I can get a bumper crop (crossing my fingers).

Sometimes I run out of things to make with fresh veggies. I usually end up making jars and jars of spaghetti sauce, which I love. But I also want to make some other things with my fresh veggies to give my kids opportunities to try new things and to actually see the veggies they are eating. Now, some kids you may just need to keep hiding the veggies in their food but somehow I got lucky and my kids LOVE their veggies.

So, today I am going to share a recipe with you that a friend shared with me and that my family loved...and that I will be making again very soon!!

Green Pepper Nachos


Ingredients:
Green Peppers
Ground Beef
Chili Powder
Onion Salt
Garlic Salt
Green Chilies
Shredded Cheese (I used Colby jack)
Garnish: tomatoes, sour cream (or plain greek yogurt), guacamole

Directions:

Preheat oven to 400 degrees. Brown the ground beef and drain. Add chili powder, onion salt and garlic salt to taste.


Cut green peppers into wedges. Place green peppers on baking sheet with parchment paper.


Layer with green chilies and ground beef mixture.


Then top with cheese.


Place tray into preheated oven for 8-10 minutes or until cheese is melted and bubbly!


Remove from oven and  top with your favorite nacho toppings...tomatoes, sour cream, guacamole, etc.



This is a great wheat free recipe. 
It can easily be adapted to fit in with the Trim Healthy Mama meal plan also. 
Full disclosure here...I did add some fake cheese and my family also ate some chips! So while this is a great healthy meal...it can also be adapted to those who don't want to eat that way!!
